Pumpkin Spice Chia Pudding (gf/df)

A perfect breakfast, snack, or even dessert!

Chia pudding has an infinite number of varieties - you can make it any way you like, and it’s virtually impossible to mess it up. This batch makes 4-5 servings (depending on the size of your containers). You can also store it in one big container and scoop it out throughout the week. Makes a perfect breakfast, snack or even dessert!

Pumpkin Spice Chia Pudding (gf/df)

INGREDIENTS

1 15-oz can lite coconut milk

1/2 can water

1/2 15-oz can pumpkin puree

100 g (about 3 scoops) vanilla protein powder

1/2 - 1 t pumpkin pie spice

1/2 cup chia seeds

INSTRUCTIONS:

1. Blend all the ingredients EXCEPT FOR THE CHIA SEEDS in a blender. In a bowl, mix chia seeds with blended liquids. Pour into lidded containers and store in the refrigerator for at least one hour and up to three days. Top with a few berries upon serving.

4-5 servings

NOTES:

  1. Coconut has a nice flavor - I like the “Lite” version for less calories. You can also substitute with Organic Almond milk.

  2. Don’t stress about the Pumpkin puree if you don’t have it - it’s a nice addition, but you can leave it out if you don’t have any in your pantry.

  3. Protein Powder - the world is your oyster! Use what you have! Truvani comes out with some great flavors and blends. Chocolate pairs well with warm spices.
