Pumpkin Spice Chia Pudding (gf/df)
INGREDIENTS
1 15-oz can lite coconut milk
1/2 can water
1/2 15-oz can pumpkin puree
100 g (about 3 scoops) vanilla protein powder
1/2 - 1 t pumpkin pie spice
1/2 cup chia seeds
INSTRUCTIONS:
1. Blend all the ingredients EXCEPT FOR THE CHIA SEEDS in a blender. In a bowl, mix chia seeds with blended liquids. Pour into lidded containers and store in the refrigerator for at least one hour and up to three days. Top with a few berries upon serving.
4-5 servings
NOTES:
Coconut has a nice flavor - I like the “Lite” version for less calories. You can also substitute with Organic Almond milk.
Don’t stress about the Pumpkin puree if you don’t have it - it’s a nice addition, but you can leave it out if you don’t have any in your pantry.
Protein Powder - the world is your oyster! Use what you have! Truvani comes out with some great flavors and blends. Chocolate pairs well with warm spices.
